Looking for healthier after school snack options? My Crunchy Apple Nachos is a fun and delicious snack your kids (and you!) will love! It takes just a few minutes to make and kids love it! You can add any variety of toppings, but today I am choosing chocolate and peanut butter with a crunchy granola topping.
Crunchy Apple Nachos
- 2 Medium Apples, sliced
- 2 Cups Water
- 1-2 TSP Lemon Juice
- 2-3 TBSP Chocolate Chips, melted
- 2-3 TBSP Peanut Butter Chips, melted — OR — 2 TBSP Peanut Butter
- 1/4 Cup Viki’s Granola, Original Variety (Other varieties include: Apple Cinnamon, Maple Cranberry, Blueberry Almond or Banana Walnut)
Slice apples. If you plan to serve immediately, then you may skip using the water and lemon juice. If you are making this ahead, then follow this step to prevent your apple slices from turning brown.
Place sliced apples in bowl or medium plastic zip bag with 2 cups of cold water and 1-2 tsp of lemon juice. Allow to soak for about 10-15 minutes. Once done, drain apples and pat completely dry.
Arrange apples on a plate or platter. Place the chocolate chips in a microwavable glass bowl. Melt in 15 second increments to avoid burning. Next, melt the peanut butter or peanut butter chips, also in 15 second intervals, until smooth enough to drizzle.
Drizzle the melted chocolate and peanut butter over the apple slices. Finally, sprinkle the Viki’s Granola over the top. Allow to sit for about 5 minutes until the chocolate and peanut butter sets. You can serve immediately or store in the refrigerator until ready to enjoy.
Substitutions can be made for any of the toppings. Here are some examples:
