Baking Substitutions

Whats worse than realizing in the middle of mixing your ingredients that you are out of a key ingredient?  Maybe you’ve been dying to try a recipe but you can’t find an ingredient or just don’t want to buy that whole container of buttermilk for the 1/2 cup it calls for.
Well hopefully those days are over!  Here is a list of substitutions I’ve been collecting over time.  It should come in handy during those moments!
Baking Substitutions
Arrowroot
  • 1 TBSP of Cornstarch per TBSP of Arrowroot
  • 2 TBSP of All Purpose Flour per 1TBSP Arrowroot
Baking Powder (Double Acting)
  • 1 1/2 TSP Single Acting Baking Powder per 1 TSP Double Acting Baking Powder
  • 1/4 TSP Baking Soda, 1/4 TSP Corn Starch & 1/2 TSP Cream of Tarter per 1 TSP of Double Acting Baking Powder
Bread Crumbs  (cup for cup)
  • Crushed Crackers
  • Corn Flakes or other plain cereal
  • Crushed Potato Chips, Tortilla Chips, Corn Chips
  • Ground Oats
Buttermilk
  • 1 Cup Milk(remove 1 TBSP)  Replace with 1 TBSP Lemon Juice or White Vinegar. Allow to sit for a few minutes
  • 1 Cup Sour Cream
  • 1 Cup Greek Yogurt
Coconut Milk
  • 3 TBSP Cream of Coconut, with enough Hot Water to equal 1 Cup (Subs 1 cup of Coconut Milk)
Corn Meal (Cup for cup)
  • Grits
  • Polenta
(Dark) Corn Syrup
  • Light Corn Syrup
  • 3:1 ratio of Light Corn Syrup and Molasses
(Light) Corn Syrup
  • Honey
Corn Starch
  • 2 TBSP Flour subs 1 TBSP Cornstarch
Corn Meal
  • Dry Polenta
Cream of Tarter
  • 1 TSP of Lemon Juice or White Vinegar subs 1 TSP Cream of Tarter
Cream, Half & Half

  • 1/2 Cup 2% milk with 1/2 Cup Heavy Cream (Whipping)

Clotted Cream

  • Mascarpone Cheese
  • Heavy Whipping Cream, whipped
Coffee, Strong Brewed, 1/2 Cup
  • 1/4 Cup Espresso Instant Espresso Powder mixed in 6 TBSP Hot Water
Evaporated Milk 
  • Equal Amount of Half & Half
Flour – Cake 
  • 3/4 Cup All Purpose Flour plus 2 TBSP Corn Starch, well sifted together per 1 Cup Cake Flour
Flour – Self-Rising
  • 1 Cup All Purpose Flour plus 1 1/2 TSP Baking Powder, 1/4 TSP Salt, sift well per 1 Cup of Self-Rising Flour
Ghee
  • Equal Amount of Clarified Butter
Honey
  • 3/4 Cup Maple Syrup combined with 1/2 Cup Granulated Sugar
Lemon Juice or Zest
  • Equal Amount of Lime Juice or Zest
Lime Juice or Zest
  • Equal Amount of Lemon or Orange Juice or Zest
Maple Syrup
  • Equal Amount of Honey
Mascarpone Cheese
  • Beat 3/4 Cup Cream Cheese with 1/4 Cup Heavy Whipping Cream
Molasses 
  • Honey
  • Dark Corn Syrup
Polenta (Dry)
  • Corn Meal
Sour Cream
  • Plain Greek Yogurt
Yogurt
  • Sour Cream
