I kept hearing about these gluten free pancakes and I’m so glad I finally decided try them. Of course I added my own twist…
Here is the recipe:
- 1 Medium Banana, not too ripe!
- 1 egg
- 1/4 tsp Baking Powder
- Sprinkle of Cinnamon, to taste (optional)
Mash the banana, then add egg. I used an electric mixer to blend well, but still slightly lumpy. (Do not over mix) Add baking powder and cinnamon.
Spoon on to hot griddle as you would any other pancakes, turning when edges begin to dry.
This mixture made 6 small pancakes approximately 3-4 inches in diameter.
Serves 1 adult or 2 small children.
Serve with a little maple syrup or raw honey. They were outstanding! So {simple}!
* Ok, so the recipe I heard about didn’t have the baking powder or the cinnamon. I was told they came out a little “eggy” or “omelet-like” so I thought the baking powder would help, and it did. For my kiddos, I added some mini chocolate chips to the batter.
