We love Caprese Salad and we love burgers, so I combined the two to make this fabulous Panini!
While the burgers were grilling, I began with these delicious torta rolls, sold at Costco. They seem to be nearly identical to focaccia rolls, also sold by LaBrea Bakery at the grocery store.
Once sliced open, I added a thin layer of prepared pesto sauce on the bread.
The burgers were now done, so on top of each, I added sliced Roma tomato, fresh basil leaves from my garden and a generous layer of mozzarella.
Now came the “panini” part. I don’t have a panini press, or a grill pan and a brick wrapped in foil. Yes, that is not an uncommon way to make a panini. My panini secret is my George Foreman Grill! I place the sandwich in the grill and press down firmly. Grill until the bread is toasted to your satisfaction and the cheese is melted. Yum! The flavor was fantastic!
Some other options for this sandwich would be to replace the burger with grilled chicken. You could also make it vegetarian by using a veggie or black bean burger, as well as a portobello mushroom. I could also enjoy this with a thick piece of grilled or baked white fish.
