Nothing gets you back on the veggie track like your 10 year old saying, “Why have we been eating less vegetables and more grain lately?”. That was really eye-opening for me. I mean, I knew, but I guess I didn’t realize how far we had fallen off the veggie wagon. It was time to get back on. I stopped at Sprouts Farmers Market and came home with 2 large bags filled with fruits and veggies.
One of the items I purchased was a head of cauliflower. My dinner plan was grilled salmon burgers with veggie fried rice. I decided to replace the rice with cauliflower.
First, trim and cut your head of cauliflower. I usually cut into large slices, then cube them. Place them, DRY, in your food processor and pulse until the cauliflower into rice-sized pieces.
Here is a closeup of what the consistency should be.
Next, heat some olive oil in a large skillet. If you have any sesame oil, add a few drops to the olive oil. It will give your dish a nice nutty flavor. You will be stir frying over med-high heat. Add the chopped onion, carrot and peppers. After a few minutes, add the cauliflower. Continue to stir fry until the cauliflower begins to soften. Add peas, then cabbage. Stir quickly and add your soy sauce (or liquid aminos) and red pepper flakes. Give a few good stirs and remove from heat. Top with some red pepper flakes, sesame seeds and serve. (You could also add some scrambled egg to this!)
THE VERDICT: Everyone ate it and there was not a single complaint!

I’ve made cauliflower rice several times before, but never this way. I think its our new favorite! I served it with grilled salmon burgers that I lightly brushed with soy and maple syrup. There was just a hint of sweetness which was a nice contrast to the added red pepper flakes that I put on my own portion of the “rice”. We left the table satisfied, but not too full or sluggish. I can’t wait to make it again!
* I actually riced a very large head of cauliflower and only used half for this dish. I have the remaining half in the fridge. When we ate Paleo, I always had some on hand
Cauliflower “Fried Rice”
- 1 Small Head Cauliflower
- 1/2 Onion, Chopped
- 1/4 Cup Carrot, Chopped
- 1/4 Cup Peppers, Chopped (I used yellow)
- 1/2 Cup Peas, Defrosted
- 1/2 Cup Cabbage, Shredded
- Soy Sauce or Liquid Aminos, To Taste (I drizzled for 2 turns around the pan)
- Red Pepper Flakes, To Taste
- Sesame Seeds, Light Sprinkle Over Top
