This is not your ordinary chicken salad. My chicken salad makeover is both healthy and full of flavor.
Chicken Salad
- 1-2 Cups Chopped Chicken (cooked)
- 1/4 Cup Plain Greek Yogurt (reduce if you prefer less creamy)
- 2 Green Onions, chopped
- 1 TBSP Cashews, coarsly chopped
- 2 TBSP Gorgonzola Crumbles
- 1-2 TBSP Dried Cranberries
- Coarse Salt and Cracked Pepper, to taste
Mix together gently and serve chilled on your favorite bread or roll.
You really cannot taste the yogurt. My husband is not a big fan of chicken salad and not only did he love this, but he couldn’t believe I used yogurt in place of mayo.
Another tasty variation of this recipe is my Club Chicken Salad Sandwich. {Simply} skip the gorgonzola, but add bacon crumbles and 1 TBSP of Ranch Dressing. Top the sandwich with sliced avocado. So tasty!
