Fruit Crisp isn’t just for apples and cool temperatures any more! Now you can enjoy it with summer fruits without heating up your kitchen on a hot day! We’ve been enjoying delicious peaches this summer and as much as I love fruit crisps and cobblers, I haven’t wanted to turn on my oven. While recently making my S’Mores Cake on the Grill, it occurred to me that I could try making some on my BBQ and we couldn’t wait to try it!
BBQ Fruit Crisp
Ingredients:
- 6 Large Peaches, peeled and sliced
- 1 Cup Berries
- 1/4 Cup and 1 TBSP Brown Sugar, divided
- 2 TSP Corn Starch
- 1 TSP Vanilla
- 1-2 TSP Lemon Juice
- 1/2 Cup Oats
- 1/3 Cup Flour
- 1/3 Cup Granola
- 1/2 Cup Butter (1 Stick), cut into cubes
Cut and peel the peaches, then place them in a large cast iron skillet. Toss in a cup of cleaned berries, then add the vanilla and lemon juice. Sprinkle 1 TBSP brown sugar and 2 teaspoons of corn starch over the fruit. Gently stir to coat evenly, then set aside.
Preheat BBQ grill on medium heat. I cooked this using indirect heat. My grill has 4 “burners”, so I only turned on two on one side and cooked the fruit crisp on the other. I thought the fruit might start to burn before the crumble topping browned if I placed the pan directly over the flame.
Next you will assemble the crumble topping. In a medium bowl, add oats, flour, granola and remaining brown sugar. Mix together. (I forgot the brown sugar when I took the photo, so I added it after I started mixing in the butter)
Cube the stick of butter and add it to the mixture. This works best when you mix with your hands. Blend together so it becomes “crumbly”. (Do not over mix until it breaks down into fine crumbs)
Spread evenly over the fruit mixture. Place the skillet on the BBQ grill over indirect heat. Grill for about 30 minutes or until the topping is golden. After 15 minutes, start checking every 5 or so minutes to avoid burning, as heat will vary in different size grills. When done, remove from heat and allow to stand for about 10-15 minutes. Serve with whipped cream or a scoop of vanilla ice cream! YUM!
