We love Greek food and my daughter has been asking me to make Greek style lemon chicken for awhile now. One of the things we love about Greek food is that its simple, nutritious and delicious! Here is an easy baked chicken recipe.
Greek Style Lemon Chicken
- 2 lbs Chicken, bone in or out (bone in usually comes out more moist)
- 2-3 Lemons
- 1/4 Cup Lemon Juice
- 2 TBSP Oregano (or more if you like bold flavor)
- 1 TBSP Garlic, minced (I add at least 2-3)
- Olive Oil
- 1/2 lb Potatoes, cleaned and cut to like size pieces
- Salt & Pepper, to taste
This chicken comes out the best when you can marinade it for several hours, but you can do it for a minimum of 1 hour. In a large ziplock bag, add your chicken, lemon juice, 2-4 TBSP of olive oil, chopped garlic and oregano. As you can see, I use A LOT of oregano. Seal bag and store in fridge until ready to cook. I try to marinade my Greek style lemon chicken for a minimum of 4 hours.
When you’re ready to cook, add your potatoes to your pan, coated with a generous coat of olive oil. Stir them around the pan so the bottom is well coated too. Zest one of your lemons and stir the zest into the potatoes. Add salt and pepper, to taste.
Add your chicken to the pan. Slice two lemons and scatter them around the chicken. Squeeze additional lemon juice over the entire pan. Use at least 1/2 fresh lemon, if not the whole thing.
Bake at 375deg until chicken is done. Cooking time will vary depending on whether you use bone in chicken or if you cut the chicken breast into smaller pieces. This will take an average of 30-45 minutes to cook. Begin checking at about 25 minutes so you don’t overcook.
We serve our Greek meals with what is called mezze. This is like an antipasto type plate with feta, tomatoes, cucumbers, greek olives and warmed pita.
My parents were visiting, so as a special treat, we also made some Spanakopita, which is a spinach and feta “pie” made with phyllo dough. YUM!
The Greek style lemon chicken, spanakopita and mezze was delicious and though we were full, no one was in a food coma after we ate. That is one thing I love about Mediterranean cooking!
