I love hard boiled eggs with smoked salmon. It combines two of my favorite breakfasts. My first favorite is bagels with cream cheese (or goat cheese), lox and capers. I also love sliced hard boiled eggs on a bagel with avocado. Truth is, I rarely eat bagels because I try to limit my gluten intake, so when I crave my bagel with lox, I often go for this option instead!
Peel and halve your hard boiled eggs. Smear a little Greek Cream Cheese on the egg and add a slice of smoked salmon. Top with capers and fresh cracked pepper. Its fast, easy and fabulous! And Gluten Free! This is great for breakfast, with a salad for lunch or a great appetizer! I think its a nice alternative to deviled eggs! I highly recommend trying your hard boiled eggs with smoked salmon – you won’t regret it!
The other part I love is that the Greek Cream Cheese adds protein! (I buy it at Sprouts Market, but I hear its also sold at Wal-mart)
