Pressure Cooker Chicken Tikka Masala
Last night I needed to get dinner on the table quickly because we had a very small break between commitments. I had some chicken breasts and decided to make a very quick, 30-min Chicken Tikka Masala. I used the Sharwoods Tikka Masala Simmer Sauce that also came in the November Degustabox. Since I was pressed for time, I decided to use my electric pressure cooker.
- 2 lbs Chicken Breast, cubed
- 1/2 Onion, sliced
- 1 Jar Sharwoods Tikka Masala Simmer Sauce
- 1/4 Cup Cilantro, chopped
- Basmati Rice, prepared according to directions
Coat the inside of the electric pressure cooker with cooking spray. Cube the chicken breast and slice the onion. Place the chicken and onion in the pot and pour the Tikka Masala Simmer Sauce over the top. Mix to coat all the chicken, then set the timer on the pot for 10 minutes (manual setting), with a natural steam release.
While the chicken is cooking, prepare the rice. I used a microwave rice cooker, so that was done in 14 minutes. I always use chicken stock instead of water when I cook rice, for extra flavor.
Once the chicken is done and the steam is released, remove from pot. Place the rice in a large serving bowl. Add the chicken on top and sprinkle the cilantro over the top. Enjoy!

Now let me tell you about my very favorite item in this box – Honees Honey Lemon Cough Drops! I’ve tried the regular Honees Cough Drops and they are good, but the Honey Lemon is my favorite! I’ve had a cough for over a week now and these have helped me most, especially when I am out and about and need to control the coughing! They have been a life saver!
Brianna’s Poppy Seed Dressing is my family’s favorite. We occasionally buy a salad kit and there is a dressing we all love included in that kit. This is almost exactly like it so we were thrilled to get it. My husband marinated some chicken breasts in it, then grilled them. It was so good! I’m sorry I didn’t get a photo of that! It would also be great for coleslaw and the pamphlet in the box even suggested using it as a dip for apples, bananas or melon.
The other items have been great for snacks. I put the Beanitos chips on lunch boxes, I hid the NibMor Chocolates for me and the Chef’s Cut Real Jerky was a good protein snack between activities. I still have a few more things to try but so far everything has been fun to try!
