Snickerdoodle Cupcakes

My family loves snickerdoodles and I love cupcakes! Awhile back I found a Cakemix Doctor recipe for snickerdoodle cupcakes. I’m not sure why I waited so long to try it because they are FABULOUS! Moist, delicious and so simple to make! I have made these Snickerdoodle Cupcakes for 3 bakes sales now and they are always the first to go!

Snickerdoodle Cupcakes

Ingredients:

  • 1 boxed yellow or white cake mix
  • 1 cup milk
  • 1 stick of melted butter, cooled
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • *Cream Cheese Frosting (see below)
    Optional – Cinnamon sugar for dusting.

Preheat oven to 350deg. Using an electric mixer, beat all ingredients together for 3 minutes and fill lined cupcake tin 2/3 to 3/4 full.

Bake 22-25 min. Cool completely and frost. This made 16 cupcakes for me.

Cream Cheese Frosting

  • 1 block softened cream cheese
  • 1/2 stick softened butter
  • 1 cup confectioners sugar
  • 1 tsp vanilla extract

Beat until smooth. Refrigerate any unused portion or frosted cupcakes. Recipe doubles easily.

This is the cream cheese frosting recipe that I’ve used forever. I can’t remember where I got it from, but its quick and delicious.

    I love the Cake doctor recipes, I used one for my daughters last birthday. My husband and daughter love snickerdoodle. I love baking even though I have an egg allergy but my family loves it. I cant find a button to follow your blog only pintrest?

    Now we love snickerdoodle cookies, so this is an interesting take. I’m thinking that we might love these. My ten year old bakes cupcakes herself, so I will ask her if she wants to try them. Trying to turn everybody into a cook in my house. That way, my cooking duties will diminish. LOL.

      These cupcakes really were a BIG hit with everyone.

    I could eat one (or 5) right about now. They really are good. And they smell incredible! My family kept opening the container I was storing them in, just to catch a whiff!
