Southwest Paleo Egg Salad

This Southwest Paleo Egg Salad is easy to make and Gluten Free

I must admit, this Southwest Paleo Egg Salad happened by accident and I am sure glad it did! My original plan was to have hard boiled eggs for breakfast. My absolute favorite breakfast has always been sliced hard boiled eggs with avocado on half a toasted sesame bagel.  I pulled out the eggs and the avocado and after I sliced them on autopilot, it hit me that I can’t have this now that I have switched to a gluten free diet.  I rummaged through my fridge to find a way to turn the plain eggs and avocado into something more tasty and grabbed some of the ingredients in my guacamole recipe. Once everything was diced and mixed, I gave it a taste and it was awesome! 

Southwest Paleo Egg Salad

  • 2 Hard Boiled Eggs
  • 1/2 Avocado
  • 1 Green Onion
  • 1 tbsp Cilantro
  • Hot Sauce, to taste
  • Drizzle of Extra Virgin Olive Oil
  • Sea Salt & Pepper, to taste
  • Sliced Cucumber
Dice the hard boiled eggs and avocado. Chop the green onion and mince the cilantro.
Mix in a medium bowl and add hot sauce, salt and pepper to taste. Top with a drizzle of olive oil and gently mix. Serve the egg salad on the cucumber rounds.
 
Tip: To prevent avocado from turning brown, toss with a little lemon or lime juice after you dice it. And for storing the 2nd half of the avocado, do not remove the pit! Just twist off the half you’ll use, after cutting. Store it in an air tight container and refrigerate.
 
This egg salad could also be served in a lettuce wrap or in half of a seeded bell pepper. And if you are not Paleo or Gluten Free, it would be great on some toasted bread or my favorite sesame bagel!
