Thats right, spaghetti squash in an enchilada casserole! I eat spaghetti squash. I don’t love it, but I’ll eat it any time and I can only eat so much of it. Previously, my favorite way was to serve it with a very meaty spaghetti sauce and lots of parmesan. Then I ran across a recipe for enchiladas that were filled with spaghetti squash. It didn’t really appeal to me, so I came up with this layered casserole and loved it!
Spaghetti Squash Enchilada Casserole
- 1 Medium Spaghetti Squash, Cooked
- 1 Large Can Preferred Enchilada Sauce (Or make your own)
- 1 Can of Diced or Rotel Tomatoes or 1 Cup of Salsa
- 1 lb Ground Beef or Turkey, Cooked (or Sub for 2 Cans of Black or Pinto Beans, drained)
- 2 TBSP Taco Seasoning of Choice
- 8 oz Shredded Cheddar Cheese
- 1-2 Green Onions, Chopped
- 1/4 Cup Cilantro, Finely Chopped
- Optional – Corn Tortillas
First cook your spaghetti squash. I do this but cutting it lengthwise and removing seeds. Place faced down in a pan with about 1 inch of water. Bake at 375deg for about 30 minutes or until you can easily pierce the skin with the end of a knife. Remove from pan and once cooled, use a fork to remove the squash from the skin. It will come out in strings, like spaghetti. Discard skin and set aside.
Now mix in your diced tomatoes or salsa.
Brown your meat and once cooked, add the taco seasoning and about 1/3 cup of the enchilada sauce.
Now it is time to start layering. Coat the bottom of your pan with a thin layer of enchilada sauce. If you are choosing to use the tortillas, then coat them with sauce and cover the bottom of your pan with a single layer. To ease the family into this dish, I opted for a top and bottom layer of corn tortillas so it more closely resembled a typical enchilada casserole. Then add alternating layers of squash, meat, sauce and cheese. Pour sauce over the top, add more cheese, chopped onions and cilantro.
Cover pan with foil and bake for 30 minutes at 350 degrees.
The Verdict:
Husband – Loved it!
Older child – Liked it.
Younger child – “This is a great idea…for someone else.”
(She ate tacos with some of the leftover meat.)
I thought it was fantastic! We will be eating this again, very soon!
