I bought a little too much spaghetti squash last time, so I’ve been thinking of different ways to serve it so no one complains for a little variety.
Spaghetti Squash Quinoa Patties
- 1 Small Spaghetti Squash, Cooked
- 3 Eggs, Beaten
- 1/2 Medium Onion, Sliced VERY THIN
- 3/4 Cup Quinoa, cooked
- 3/4 Cup Shredded Mozzarella
- 1/2 Cup Parmesan
- 1 Tsp Italian Seasoning
- Salt & Pepper, To Taste
Mix all ingredients together and blend well. Heat a skillet with a little olive oil.
Spoon the mixture in the pan to form patties.
Once cooked half way through, flip over and continue cooking until golden brown.
Keep warm in a 200 deg oven until ready to serve.
My family likes “sauce” on everything. I used 1/2 cup Greek yogurt and mixed in 1 tsp of prepared pesto (I always keep a jar in the fridge!) and a few fresh basil leaves from the garden, finely chopped. I grilled a few red peppers and sliced them on top.
And there was our “Meatless Tuesday”.
These patties were really delicious. Can’t wait to have leftovers for lunch!
