Spicy Sausage Focaccia Frittata and Giveaway

With summer here, we don’t need to wait for the weekend to enjoy a big yummy breakfast and this Spicy Sausage Focaccia Frittata is perfect for a weekday brunch! This dish has the perfect blend of spice with a hint of sweet, thanks to the LA VICTORIA® Mango Habanero Salsa I served with this frittata.

This favorite breakfast dish was inspired by my Grandma’s “bread omelet”. Growing up, she would sometimes make it for lunch when I was visiting. She made hers “Italian-style” with semolina bread, egg, onion, oregano and fresh basil. On the side, we would have some pepperoni and provolone, which you would always find in her fridge! She later moved to San Diego and it wasn’t until I moved to San Diego myself, that I was reunited with her (family)famous recipe. The longer I lived in Southern California, the more I found that I started adding more of a southwestern flair in my recipes. Jalapeños and salsa became staples in my fridge, which is how Grandma’s bread omelet transitioned into a spicy sausage focaccia frittata. 

TIP: If you don’t have focaccia, use any type of crusty bread cut into cubes. Another favorite option is to use crostini! The small rounds of bread get nice and toasted and are a great alternative!

Soooo, confession time. I don’t like eggs. I never have. But I will usually eat them IF they are not runny and are served with bread which is why I love this recipe! The bread gets crisp on the outside and stays soft on the inside. The sausage, peppers and LA VICTORIA® Mango Habanero salsa give such great flavor, that I am barely thinking about the eggs!

Spicy Sausage Focaccia Frittata

Servings 3

Ingredients
  

  • 3 Thick Slices Jalapeño Cheese Focaccia cubed
  • 1-2 TBSP Olive Oil
  • 5-6 Eggs beaten
  • 1 Link Spicy Sausage precooked and sliced thin
  • 1/2-1 Jalapeno Pepper thinly sliced (to taste)
  • Shredded Cheddar Cheese small handful
  • 1 TBSP Cilantro finely chopped
  • Sour Cream. optional
  • Salsa I used LA VICTORIA® Mango Habanero
  • Salt & Pepper to taste

Instructions
 

  • Heat oil in cast iron pan over medium heat. When the oil is hot, add bread cubed and brown both sides.
  • In a medium bowl, beat eggs, then pour them over the bread cubes.
  • While the eggs begin to cook, slice precooked spicy sausage link, then arrange over top of eggs.
  • Clean, slice, (and seed) desired amount of jalapeño.
  • Cover until the top of egg is cooked through.
  • Lower heat if necessary.
  • In the last minute of cooking, sprinkle the cilantro and a little cheddar over the top.
  • Garnish with a dollop of sour cream and top with salsa.
  • Enjoy!

This is a hearty and delicious breakfast, brunch or lunch recipe. We have even had this for dinner! You can use any type of sausage you like. This time I happened to have leftover spicy mango chicken sausage, but I typically use a habanero chicken sausage in my spicy breakfast recipes. If you prefer less heat, then use a mild sausage. Use whatever you like!

LA VICTORIA® Brand Salsa has new fruity summer inspired flavors! Mango Habanero and Pineapple, which goes so well with peppers and spice, plus a Roasted Pepper Salsa too! I have been enjoying it on tacos, quesadillas, fish, chicken and of course my spicy sausage focaccia frittata! The possibilities are endless! I have really come to love the spicy/sweet flavor combo! The sweetness of the fruit is a perfect balance for the spice of the hot peppers. This is a medium heat salsa, but I didn’t find it to be very spicy. It was just enough, and not overwhelming.

    Everything about this dish sings to me. This is exactly the type of egg dish I love to make. From the toasted bread you used to the Mexican flavors. Awesome!

    I’ve never heard of using bread in a frittata but man does it look good! Since there is sausage in this, I could totally see my family loving it as a lighter dinner option!
