I was inspired to create these gluten free Toffee Cheesecake Bites by some amazing handcrafted toffee samples by B.Toffee of Newport Beach, Ca.
Who doesn’t love small scrumptious bites while enjoying a glass of wine? Yesterday I was nibbling on a decadent B.Toffee square with milk chocolate and started thinking about how wonderful it would be with cheesecake. And wine.
I found myself in the kitchen pulling out various ingredients and I ended up with a fresh fig, stuffed with cheesecake filling and topped with B.Toffee bits. It was pure heaven! The recipe was delicious and so simple to make!
Toffee Cheesecake Stuffed Figs
- 6 Fresh Figs, halved
- 2 oz Cream Cheese
- 1 TBSP Brown Sugar
- Few Drops of Pure Vanilla Extract
- Sprinkle of Cinnamon, to taste
- B.Toffee Bits
Clean and halve your figs, then set aside. In a small bowl, combine the cream cheese, brown sugar, vanilla and cinnamon, until well blended. Add a heaping teaspoon to the top of each fig, then sprinkle the B.Toffee Bits on top. Chill for about 10-15 minutes before serving. Enjoy with a nice glass of Mirassou Pinot Noir.

I would either eat it alone, which is fabulous, or only in a very special recipe. (Like this one, of course!)

I LOVE figs. We have fig trees in our neighbor’s yard that hang over into ours and I never know what to make with them. Thank you for posting this! They look delicious!
