Ultimate Grilled Chicken Bombs
Its football season and time for tailgating and finger foods. Make these Ultimate Grilled Chicken Bombs to enjoy while you watch the game. They are seriously, THE BOMB! This past week I decided to make a few finger foods to enjoy while we my husband watched the game. (Technically I was there…) I’ve made a version of chicken bombs before, but this time I decided to make smaller, bite-sized pieces. While I was at Ralph’s shopping for dinner, I picked up some Foster Farms Fresh & Natural Thighs and Stubb’s BBQ Sauce. (By the way, look for an IRC (Instant Redeemable Coupon) for immediate in-store savings until 12/31/15 when you buy both!) I like Foster Farms Fresh & Natural Chicken because it is always fresh, 100% natural and there are no added hormones or steroids. Now I did buy bone-in thighs, but when I was talking to my daughter about my plan to remove the bones, the butcher at Ralph’s heard me and offered to de-bone and remove the skin from the whole package for me! SCORE! Meanwhile I headed to the condiment aisle to look for some BBQ sauce. I have a friend that is gluten-free. She was telling me about Stubb’s Bar-B-Q sauces, marinades and rubs because they are made with gluten free ingredients, free of high-fructose corn syrup and are Non-GMO. I never knew they has so many flavors! I chose Sweet Heat because I love the combination of sweet and spicy!
Ultimate Grilled Chicken Bombs
- 6 Boneless Chicken Thighs
- 3 Pepper Jack Cheese Sticks (or cut cubes from a block)
- 9 Slices Bacon (thin cut works best)
- 1/2 Cup Stubb’s Bar-B-Q Sauce (any flavor)
Preheat grill on medium heat.
Trim chicken breast and pound thin between 2 sheets of wax paper. Slice each thigh in thirds. Cut the pepper jack cheese sticks into quarters.
Place a chunk of cheese in the center of a strip of chicken. Roll the chicken around the cheese and try to seal it the best you can.
Next wrap a slice of bacon around each piece of wrapped chicken. Try to wrap it tight enough so it won’t unravel during grilling.
Next brush the Stubb’s Bar-B-Q Sauce over the wrapped chicken.
Place the chicken on the heated grill. Since the chicken was pounded thin, it will cook faster. It took about 6-8 minutes per side. Continue to baste chicken with BBQ sauce, as desired.

Oh wow, these bombs look amazing! I love Foster Farms and Stubb’s BBQ sauce. I’ve never tried the sweet heat flavor, though. I love your football eggs in the background. So fun!

Wow these look good. And they seem pretty easy to make too. I can see that these will be a big hit at a football party!
