This is my second installment of “Whats For Dinner”! It is where I have no meal planned, everyone is starving and I need to put together a quick meal from whatever is in the fridge.
Sunday is the one day we make a great effort to have a family dinner. We usually have something I wouldn’t normally make on a weeknight. But we got so busy yesterday, that I forgot to plan or defrost anything. So here are the ingredients I came up with:
Pasta With Broccoli (Great for a Meatless Monday!)
Prepare one package of spaghetti (or any other pasta of choice) according to directions.
Meanwhile, saute about 1/4 cup chopped onion in some olive oil. When translucent, add a tsp of chopped garlic, then set aside.
Either chop fresh broccoli and steam or prepare a package of frozen florettes. Make sure the broccoli is in small enough pieces to spread evenly through the pasta.
Once broccoli is done and drained, add a generous amount of olive oil to your pan of onion and garlic. Make sure it is enough to not only coat the broccoli, but the amount of pasta you have cooking as well. I don’t measure, but I’ll guess 1/8-1/4 cup? Add chopped broccoli to pan and give a good stir. Pour over drained pasta and gently mix. Season with fresh cracked pepper and sea salt, to taste.
I used one package of frozen organic broccoli florettes. (Costco sells it and we keep it on hand for last minute meals like this!) This package of pasta was 12 oz and served 4.
Top with cheese of preference, and maybe some red pepper flakes or Italian seasoning. We all like different cheeses, so one bowl had feta, two had parmesan and one had gorgonzola.
Grandma used to make something like this when I was a kid. Sometimes had fried peppers and onions and she topped it with toasted, well-seasoned bread crumbs. (toasted in a dry skillet) So good, so {simple}!
