I need to get my act together! We’ve been so busy and maybe I’m not managing my time as well as I should that I didn’t have a dinner plan again. Oh, and I hadn’t gone grocery shopping either, so it was slim pickins the other night. Here is what I found:
Left over rice
Boneless, skinless canned salmon
Eggs
Salad Mix
Which meant we were having salmon patties.
Asian Inspired Salmon Patties
2 Cans Boneless Skinless Salmon, drained
4 Eggs, beaten
1 Cup Cooked Rice (I used brown)
1/4 Cup Finely Chopped Onion
3-5 TBSP Tamari Sauce (Aged Soy – Can Sub regular Soy or Teriyaki)
Sprinkle of Ground Ginger
Salt & Pepper to taste.
Mix all ingredients well and form into patties. Heat pan over medium heat and add oil for frying. When hot, cook until the patties are cooked about half way up from the bottom, then flip. They will cook for approx 4 minutes per side.
This mixture made 6 good sized patties.
We ate them with a salad topped with Sesame Asian dressing.
The next morning, we had the leftovers for breakfast, topped with creamed cheese and scrambled eggs.
