Wilted Greens With Toasted Almonds and Cranberries

I grew up eating all types of greens and I absolutely love them. I will eat greens sautéed, in soups and even on pizza! Most of the time I will heat a little olive oil in my cast iron skillet and and add either spinach, kale or chard. Once it begins to wilt, I will add a splash of balsamic vinegar and some kosher salt. A quick side dish that can be made in 5 minutes!  Trader Joe’s sells 1 lb. bags of washed and precut kale and rainbow chard, each for $1.99. I usually keep a bag of kale and the chard in my fridge. The kale is mainly used for smoothies and the chard is for my lunch or a quick side with dinner.  Tonight I tried something new and it was so tasty!

 
  • 1 lb. Rainbow Chard (or any green of choice), cleaned and chopped
  • 2-3 TBSP Olive Oil
  • Crushed Garlic, to taste
  • Kosher Salt and Fresh Ground Pepper, to taste
  • 1/8 Cup Toasted Almonds
  • 1/8 Cup Dried Cranberries (can sub raisins or currants)
First prepare your almonds for toasting.  You can toast them in a dry pan over medium heat or even in a single layer on foil in your toaster over.  As they begin to brown at the edges, remove from heat and set aside. 
 
Now heat (med-high) some olive oil in your pan.  As it begins to get hot, add a little crushed garlic to flavor the oil. Add your greens and as they begin to wilt, give a little stir, so they cook evenly.  They should be done very quickly. Toss in the toasted almonds and cranberries.  Add salt and pepper, to taste. Serve immediately. This {simple} side dish is healthy and packed with vitamin and flavor. Best of all, it can really be done in about 5 minutes!
