I grew up eating all types of greens and I absolutely love them. I will eat greens sautéed, in soups and even on pizza! Most of the time I will heat a little olive oil in my cast iron skillet and and add either spinach, kale or chard. Once it begins to wilt, I will add a splash of balsamic vinegar and some kosher salt. A quick side dish that can be made in 5 minutes! Trader Joe’s sells 1 lb. bags of washed and precut kale and rainbow chard, each for $1.99. I usually keep a bag of kale and the chard in my fridge. The kale is mainly used for smoothies and the chard is for my lunch or a quick side with dinner. Tonight I tried something new and it was so tasty!
- 1 lb. Rainbow Chard (or any green of choice), cleaned and chopped
- 2-3 TBSP Olive Oil
- Crushed Garlic, to taste
- Kosher Salt and Fresh Ground Pepper, to taste
- 1/8 Cup Toasted Almonds
- 1/8 Cup Dried Cranberries (can sub raisins or currants)
