My Baked Gluten Free Corn Dogs are a healthy alternative to the popular fried version. They are so simple to make and are great for lunch, after school snacks or watching the game! Most corn dogs are fried and greasy, but not these!
Begin with your favorite Gluten Free Corn Muffin Mix!
Baked Gluten Free Corn Dogs
- 1 Package Gluten Free Cornbread Mix
- 1 1/2 Cups Milk (rice, soy, dairy, or almond)
- 1/3 Cup Oil or Melted Butter
- 2 Eggs, beaten
- 4 Chicken Sausage Links, cooked and cut into quarters.
Preheat oven to 375 degrees. Meanwhile, combine the cornbread mix with the milk, eggs and oil. I was out of dairy milk, so I used almond milk instead and it worked well. Stir all the ingredients until blended. Grease a muffin tin and add about 1/4 of batter to each. Press a cut chunk of chicken sausage in the center of each muffin. I used one of our favorite chicken sausages. Its a Pineapple-Bacon flavored chicken sausage and it is DELICIOUS! My kids love this variety so I knew it would be perfect in these corn dogs.
Bake for about 15 minutes or until golden brown. Remove from oven and allow to cool about 10minutes before removing muffins from the tins.
I admit that I have never been a fan of corn dogs because I don’t really like too many fried foods. I especially don’t care for fried dough in any form. But I was very pleasantly surprised by how much I enjoyed these gluten free corn dogs! I served them with ketchup and mustard. My husband and I chose jalapeño mustard for ours and it was a nice balance of spice with the sweetness of the cornbread and the pineapple bacon sausage. You could make them with any flavor you like.
As good as they were, the only thing I might change next time is to use less batter in each muffin. There was a bit more bread than meat and I think it would be even better with less bread on the outside. This recipe yielded 12 gluten free corn dogs, but I think with less batter in each, you could easily make 16-18. You could also try this in a mini muffin tin. If you do, be sure to check them after baking about 8 minutes to keep from over-baking.
