Lime Sorbet

This Lime Sorbet is sweet, tangy, frosty and refreshing!  Perfect for a hot summer day.  And, of course, I make it in my Vitamix! This is the single most requested treat in our house and its healthy enough that I will serve it to the kiddos every single day, if asked.

Lime Sorbet
 
  • Wedge of Lime, about 1/4 of the lime
  • 1/4 Cup of Liquid – I typically use water with at least a tablespoon of lemon or lime juice. It depends on how tart you like it. I have also used unsweetened iced green tea.
  • 2 cups of raw spinach
  • 4 cups of ice
  • 1-2 TBSP of either Coconut Sugar or Raw Honey *
(*Too much liquid sweetener can change the consistency to more of a slush.  If you add too much, simply increase the amount of ice a little at a time until it thickens.)
 
 
 
 
 
Place all items in your #Vitamix on Low, Variable 1, and quickly increase to Variable 10, then High.  Blend until the consistency is that of a smooth sorbet.  Serve immediately.
 
I promise that you cannot taste the spinach AT ALL.  One of my kiddos will not eat spinach but loves this.  We usually call it Spinach Sorbet, but I knew that name might have scared a few of you away… But seriously, you must try this.  You will not be disappointed!

      I haven’t actually tried that. Its possible that it would freeze solid and would be hard to scoop later.
