Peanut Butter Ice Cream

Today, we made one of our favorite desserts, peanut butter ice cream, in a blender!!  I’ve said it before, but I LOVE my Vitamix!  I use it every day.  While we make smoothies most often, ice cream and sorbet are right up there. What I love about this ice cream is that its all natural and has only a few ingredients. I use organic milk and natural peanut butter, though any type you have will work just as well. It can be made with or without the chocolate chips. An alternative option would be to use crunchy peanut butter or to add nuts for added crunch. You could also make this ice cream with other nut butters, such as cashew or almond.

Peanut Butter Ice Cream

  • 1/2 Cup Natural Peanut Butter
  • 1/2 Cup Cold Organic Milk
  • 1-2 TBSP Raw Honey (Can use Agave Syrup)
  • 3 Cups Ice
  • 1/3 Cup Chocolate Chips (optional)
 
Add first 4 ingredients to Vitamix.  Begin on Variable 1 and immediately increase to 10.  When well blended, switch to High.  Blend about a minute until thick, add more ice if you want a thicker consistency.  Add chocolate chips at the end and blend for a few seconds until mixed throughout.  Serves 4-6.

Pineapple Basil Sorbet – Refreshing with a sweet tropical flavor and a hint of mint!
